[spa] Los alimentos ultraprocesados son formulaciones industriales con ingredientes
obtenidos a partir de la extracción de alimentos, o bien sintetizados
artificialmente, sometidos a varias etapas de procesamiento, con el objetivo de
hacerlos más duraderos, accesibles, hiper-palatables, atractivos y listos para el
consumo. Los patrones alimentarios marcados por una elevada ingesta de
alimentos UP están asociados al aumento de la obesidad y sus comorbilidades
como la hipertensión y a la presentación de peores indicadores de salud en
estudiantes universitarios. La prevalencia de diversas enfermedades no
transmisibles, como la diabetes, la hipertensión y el accidente cerebrovascular,
han aumentado a nivel mundial.
El objetivo de este estudio es evaluar la ingesta alimentaria entre un grupo de
estudiantes universitarios y correlacionar estos hábitos nutricionales (según el
grado de procesamiento y los grupos de alimentos: procesados mínimamente
(grupo 1), ingredientes culinarios procesados (grupo 2) o productos
ultraprocesados (grupo 3) con la talla, peso, la tensión arterial y parámetros
bioquímicos.
Para cumplir estos objetivos se estudiaran los hábitos alimentarios de
estudiantes de primer curso de diversos grados universitarios de la Universidad
de Murcia mediante un cuestionario y la correlación de esta información con
variables como la edad, sexo, talla, peso, medidas antropométricas, estudio de
composición corporal, bioquímica sanguínea (colesterol, triglicéridos, glucosa,
ácido úrico) y tensión arterial.
Se va a buscar una correlación entre sujetos con ingesta de tipo 1, 2 ó 3 y los
valores de las variables dependientes medidas. En función de las respuestas a
la encuesta, cada sujeto se asignará a un tipo de ingesta.
Los datos se analizarán mediante un análisis descriptivo de todas las variables
dentro de los grupos evaluando las diferencias en la distribución de la
frecuencia de las respuestas. Además se efectuará una asociación de variables. Los resultados obtenidos de estos análisis permitirán conocer los
hábitos de consumo de alimentos ultraprocesados en estudiantes universitarios
y su posible impacto en las variables de salud medidas. En concreto permitirá
conocer si estos hábitos tienen impacto en los niveles de glucosa, colesterol,
triglicéridos, ácido úrico, tensión arterial, peso y composición corporal, y en
definitiva en el estado de salud. |

[eng] Ultra-processed foods are industrial formulations with ingredients obtained from
the extraction of food, or artificially synthesized, subjected to several stages of
processing, with the aim of making them more durable, accessible, hyper-labile,
attractive and ready for consumption. The eating patterns marked by a high
intake of UP foods are associated with the increase in obesity and its
comorbidities such as hypertension and the presentation of worse health
indicators in university students. The prevalence of various non-communicable
diseases, such as diabetes, hypertension and stroke, has increased worldwide.
The objective of this study is to evaluate the dietary intake among a group of
university students and correlate these nutritional habits (according to the
degree of processing and food groups: minimally processed (group 1),
processed culinary ingredients (group 2) or ultraprocessed products (group 3)
with size, weight, blood pressure and biochemical parameters.
To meet these objectives we aime to study the eating habits of first-year
students of various university degrees of the University of Murcia through a
questionnaire and the correlation of this information with variables such as age,
gender, height, weight, anthropometric measures, body composition study,
biochemical blood test (cholesterol, triglycerides, glucose, uric acid) and blood
pressure.
We will analyse correlations between subjects with type 1, 2 or 3 intake and the
values of the measured dependent variables. Depending on the responses to
the questionnaire, each subject will be assigned to a type of intake.
The data will be analyzed by means of a descriptive analysis of all the variables
within the groups, evaluating the differences in the distribution of the frequency
of the answers. In addition, an association of variables will be made. The results
obtained from these analyzes will allow us to know the consumption habits of
ultra-processed foods in university students and their possible impact on the
measured health variables. Specifically, it will allow us to know if these habits
have an impact on the levels of glucose, cholesterol, triglycerides, uric acid,
blood pressure, weight and body composition. |
