[spa] El gluten es un conglomerado de proteínas que se encuentran principalmente en el trigo,
que tiene función de aglutinante, emulgente y gelificante, además de caracterizarse por
brindar textura elástica a diferentes productos alimenticios derivados de este cereal,
entre ellos productos de panificación. La enfermedad celiaca es una enteropatía
autoinmune causada por factores genéticos y ambientales, que se activa por proteínas
contenidas en el gluten. Debido a que una dieta libre de gluten es actualmente el único
tratamiento para la enfermedad celiaca, las empresas de alimentos se han dedicado a
formular productos con ingredientes sin gluten. Sin embargo, a nivel tecnológico
encontrar alternativas que simulen las propiedades estructurales del gluten en el pan es
un continuo desafío. El objetivo de este trabajo fue realizar una búsqueda bibliográfica
de un mejorante(s) natural y vegano que mejorara la textura y calidad del pan sin gluten,
manteniendo también su calidad nutricional. Posteriormente se realizaron pruebas con
uno de los candidatos propuestos para comprobar su funcionalidad en la formulación de
pan sin gluten. Durante las prácticas profesionales con Glutify, una empresa dedicada a
brindar bienestar y seguridad alimentaria a las personas con enfermedad celiaca dentro
y fuera de casa, se aportaron conocimientos teóricos y prácticos de apoyo a una
panadería tradicional para la formulación de pan sin gluten manteniendo la calidad y
sabor.
[eng] Gluten is a conglomerate of proteins found mainly in wheat, which has a binding,
emulsifying and gelling function, in addition it provides elastic texture to different food
products derived from this cereal, including bakery products. Celiac disease is an
autoimmune enteropathy caused by genetic and environmental factors, which is activated
by proteins contained in gluten. Because a gluten-free diet is currently the only treatment
for celiac disease, food companies have committed to formulate gluten-free products.
Nevertheless, on a technological level, finding alternatives that simulate the structural
properties of gluten in bread is an ongoing challenge. The objective of this work was to
carry out a bibliographic research for a natural and vegan improver(s) that would enhance
the texture and quality of gluten-free bread, while also maintaining its nutritional quality.
Subsequently, tests were carried out with one of the proposed candidates to verify its
functionality in the formulation of gluten-free bread. During the internship with Glutify, a
company dedicated to ensuring well-being and food safety to people with celiac disease
inside and outside their homes, theoretical and practical knowledge was provided to
support a traditional bakery for the formulation of gluten-free bread, while maintaining
quality and flavor.
