[spa] El interés por practicar el veganismo ha aumentado en los últimos años, cada vez son más
las personas que rechazan en su dieta los productos de origen animal. Esta dieta bien
planeada puede ser saludable e incluso beneficiosa para la salud. Pero el riesgo de padecer
carencias nutricionales que existe en toda la población general, puede acentuarse en las
personas veganas cuya cantidad de nutrientes o biodisponibilidad se ve limitada al
provenir de fuentes vegetales. Especialmente, para los individuos portadores de
determinados polimorfismos en genes implicados en la absorción o metabolismo de estos
nutrientes.
El presente trabajo se ha enfocado en los micronutrientes cuya ingesta y niveles en sangre
para la población vegana suelen estar por debajo de la media o incluso llegar a presentar
déficit. A partir de ahí, se ha procedido a identificar y estudiar los principales
polimorfismos que pueden afectar aún más la biodisponibilidad de las vitaminas D, B12
y A y, de los minerales hierro, calcio y zinc. La vitamina A, a pesar de ser ampliamente
consumida en dietas veganas en forma de carotenoides precursores, ha sido incluida por
existir polimorfismos que pueden afectar la eficacia en la conversión de carotenoides
provitamina A en vitamina A.
Para sintetizar los resultados obtenidos, se ha creado un prototipo de test nutrigenético,
enfocado a población caucásica, en el que se incluyen los polimorfismos más
representativos y las recomendaciones nutricionales para la población vegana en caso de
presentarlos. En algunos casos, la suplementación podría ser la única opción para no
presentar carencias nutricionales.
[eng] Over the past few years, the veganism has increased worldwide, and every day more
people refuse the animal products in their diets. A well-planned vegan diet can be safe or
even beneficial for the health. But the risk of having nutritional deficiencies that affect
the general population, could be increased in vegan people due to the nutrient quantity in
food or the bioavailability of the micronutrients is limited because of the vegetal sources.
Specially, for those who carry some polymorphisms in gene imply in the absorption or
metabolism of that nutrients.
Diseño de un test nutrigenético específico adaptado a los polimorfismos génicos que afectan a la biodisponibilidad
de micronutrientes en población vegana

The present project has been focusing on the micronutrients, which intake and blood
levels for the vegan population used to be below the mean or even, in some cases, show
a deficit. After that, I have proceeded to identify and study the main polymorphisms that
can affect even more the bioavailability of the vitamins D, B-12 and A and of the minerals
iron, calcium and zinc. Vitamin A, despite being widely consumed in vegan diets in its
carotenoid precursor form, has been included because of the existence of polymorphisms
that can affect the efficiency of the conversion from this precursor to vitamin A.
In order to synthetize the results obtained, it has been created a prototype of nutrigenetic
test focused on the Caucasian population, in which are included the most significant
polymorphisms and the nutritional recommendations for the vegan population who carry
at least one of them. In some cases, the supplementation could be the unique option to
avoid nutritional deficiencies.
