[spa] El atún rojo del Atlántico ha sido y es una de las especies más importantes tanto a nivel
biológico como a nivel comercial. Sus características fisiológicas y su fama culinaria han
provocado que el atún rojo sea una de las especies que más interés genera en el sector de
la acuicultura. Sin embargo, el cultivo de atún rojo se encuentra todavía en desarrollo.
Dentro de este cultivo larvario existe una alta tasa de mortalidad, debido principalmente a
malformaciones, canibalismo y colisiones. Este trabajo pretende dar respuesta a una parte
de esa mortalidad, mediante el análisis del perfil de ácidos grasos, y en especial de DHA y
EPA, en retinas de juveniles de atún rojo. A partir del muestreo de estos individuos y el
análisis de los ácidos grasos en sus retinas, se han comparado los resultados con los ácidos
grasos de juveniles vivos muestreados de cultivo y salvajes. Se ha podido mostrar la
importancia de una dieta rica en ácidos grasos, especialmente en ácidos grasos
poliinsaturados (PUFAs), y la importancia de un alto contenido de DHA en la retina.
[eng] The Atlantic bluefin tuna has been and is one of the most important species both
biologically and commercially. Its physiological characteristics and culinary fame have made
bluefin tuna one of the species that generates most interest in the aquaculture sector.
However, bluefin tuna farming is still under development. Within this larval culture there is
a high mortality rate, mainly due to malformations, cannibalism and collisions. This work
aims to provide an answer to part of this mortality by analysing the fatty acid profile,
especially DHA and EPA, in the retinas of juvenile bluefin tuna. Based on the sampling of
these individuals and the analysis of the fatty acids in their retinas, the results have been
compared with the fatty acids of live juveniles sampled from culture and the wild. The
importance of a diet rich in fatty acids, especially polyunsaturated fatty acids (PUFAs), and
the importance of a high DHA content in the retina have been shown.
